Along the way, he befriends an Ultra Beast that helps him survive in this strange new world. He also has to deal with the different rules and powers that exist in the Ultra Beast realm.

I'd say the Elementalist. It has powerful spellcasting abilities which can deal significant damage to enemies in the story. You can choose from different elements like fire for offense, water for healing and support a bit, earth for defense in a way. With the right combination of spells, you can blast through most of the challenges in the story quite easily.

Well, one of the great things about the Guild Wars 2 class stories is the immersion. Take the Warrior class. Their story might lead you to battle in epic wars, face off against fearsome foes, and make decisions that shape not only your character's journey but also the fate of the regions they are in.
