Night Walker didn't understand human language but still understood the implication behind the poor man's words. Aside from that, the monster didn't like the haughty and contemptuous way the former hunter looked at it.
This isn't how a prey behaves in the face of a predator. The scolopendra wanted to sow the seeds of fear and cultivate them during the fight, only to savor the sweet sight of despair and resignation at the very end.
This was to be the punishment for the insult suffered at the hands of man. After all, the monster, despite its limited intelligence, also possessed pride, which was swept into the mud. However, the result was quite different from what Night Walker aimed for.
