With three minutes left, he still had to figure out what to make as an appetizer and dessert. With a Szechuan style main dish, he would need an appetizer and dessert that counteracts the heavy taste of the main dish. He also needed to figure out what to serve the lobster and prawn with.
He had many ideas for the appetizers like fried shrimp, spring rolls, spare rips, chicken wings ect, they are all great options as they all have excellent qualities to be great appetizers. But the problem with them is that he felt like they didn't fit with the main dish. He wants something that tastes amazing, isn't too filling and makes the person eating, wanting more. But the appetizer also makes them not only expect the main dish but yearn for it, which will make it taste even better.
