to be entirely fair this isnt all that shocking, after all in canon we see the fullbringers, humans with hollow powers, thus it is entirely logical that a human who has had their spiritual self stimulated by exposure to a hollow would become immune to some of that hollow's spiritual phenomenon, at least on a miniscule level.
i think he was referring to the fact that hollows dont actually need to eat souls to survive, rather they do it to fill the hole where their 'heart' use to be, the only hollow that actually needs to consume others are adjuchas as if they dont they will regress to gillians, normal hollows are entirely able to survive off the reishi in the air, which might actuallly lead to a different path of evolution if one was to take that phenomenon to it's most extreme, i mean imagine a normal hollow who hadnt eaten any souls having the power of a gillian, what would happen? if a normal hollow who hadnt eaten any souls had the power of a vasto lorde would they become one?, maybe there is some other reason for evolution?
