So this is based on my experience in cooking rice, and fried rice, I'm not a chef just a simple man eating rice everyday for my lunch and dinner. So reducing water from cooking rice for your fried rice is good, you don't want your rice to be sticky or clumpy, you want it to be a bit hard but definitely not raw. I don't think you need a day old rice to make fried rice, but what you want is cold, not ice cold, room temp rice would work, but a bit of colder rice is nice, it is dryer which is easier to mash and separate the grains, frying it hot will just overcook it and it's irritating if it starts sticking on the wok. Man my Asian genes are coming out.

yeah, I think. The dish is about eggs, not rice. The star of this dish is rice not the egg. While Soma on the other hand made his simple omelette with its flavor supported by chicken aspics.

'I THINK', I think you should try and post this to RoyalRoad, I have seen some readers and writers there help their fellow authors by giving some advice and comment. You can also ask people in reddit for advice, maybe a beta reader or co-writer for help. Hopefully you don't attract some unsavory people that will kill this beautiful hobby of yours. Well you can just ignore it then.
Now I will come to the important thing. As you may have noticed English isn't my first language and it seems my grammar is pretty off sometimes. I only write as a hobby and don't have an editor or something similar. Due to this, I may make some mistakes. Be it an accidental perspective switch(which I do pretty often. I luckily notice it sometimes, but I also fail to see that). If you see some mistakes please comment it. I read almost every comment I see and I will correct the mistakes. If it interrupts your flow or you don't like to comment, please don't comment. This is just a kind of "help notice", if someone sees something and he doesn't mind commenting.
