Have you seen inside your conventional oven lately? You may see there's a top and bottom burner and mainly three tiered.
Normally the conventional oven would have regulated heat but in the case of this clay ovens, the Firewood that was placed on the top was about ⅓ of the firewood used below so that the bread placed on the second tier won't get burnt.
