The bible gets changed all the time. It used to be mainly due to rulers using it to their advantage. More recent edits are mainly to keep up with slightly more modern ideas

Indeed they obvs use scrips, but those arent made by legal hackers man. Legal scripts are generally protected against immediately.
Several computer experts, hackers from the darknet across the world would try to rectify the situation and crack the mystery but in the end, they would all only fail.

Do religious organisations ever?
While the timeline of Antiquity was mostly intact, what happened after changed drastically from the world Julian was from. The East-West Schism never occurred within the church; as such, the Orthodox and Catholic Churches never drifted apart. Instead, the relationship between the two churches was rather Cordial, thus the Papacy held even more power than it did within our timeline.
