Cheese was created 4,000 years ago by accident (but it may have even been produced as far back as 7,500 years ago).
It takes 10 pounds of milk to make 1 pound of cheese.

Cheese can cause weird dreams: Volunteers eating Stilton cheese reported strange and vivid dreams including soldiers fighting with kittens instead of guns, and a vegetarian crocodile upset because it couldn't eat children. Cheddar was found to encourage dreams featuring celebrities and Red Leicester seemed to create nostalgic dreams of childhood and old friends.
Some cheeses are illegal in the U.S. and for a good reason too. (don't google it unless you want to see pictures of maggots, etc.)
