The vast majority of taxes in westeros are paid in labor (peasant levies/unpaid labor) or in kind by paying a portion of your harvest

Castle taxes
-Tax on fortifications direct tax to the king 40% of the cost of the castle
Tax on roads/bridges at the disposal of the feudal lord, but they must send 20% to their hierarchical superior
Mill tax 10% of the grain converted into flour 30% to his superior
