jiraya cannot use sage mode by himself, he needs to depend on the two toads which he will have to summon and which requires a lot of chakra, and the both of them help jiraya in gathering and assimilating natural energy which he can't do by himself. So Jiraya is literally the worst example of a sage. He needs a LOT of prep time, and it is unknown whether Itachi would even give him the time to complete the steps. (Itachi actually passed certain information to Jiraya about the akatsuki during that time if you noticed carefully) there was bound to be no fight at all and if there was Itachi would win.
