Relevant stats will increase since it can be considered training but don't expect agility to increase since it have nothing to do with smithing and endurance would only increase if he does another extremely long session. Also, the stat increases won't be as big as when he's hunting monsters.

It's true that Duel Field is technically not an inherent ability of the spear but it is a magecraft that Achilles developed for use in combination with the spear, meaning he can't use it without it. He basically throws the spear into the ground where it creates a spherical domain where nothing can get in or interfere, not even luck. It also pauses time outside the field while the duel is happening.
