I understand your point, and I do know it should be like "how do you do that?". But yeah writing as a script or a dialogue, it all went on characters and their behaviors. Writing dialogue to a character must express his feeling/behavior here they speaking as they want without things less or more for grammar. Like here, "How do you do that?" is Grammarly correct, but "How you do that?" is "(surprise)" correct. Btw you must understand it's a dialogue, someone speaking. and rarely people care for grammar, and in situations like "surprise", grammar is the last thing to think. So, here I do think that "how you do that?" is correct cause it adds surprise feel to the character. Anyway, thanks. if I over-explain it sorry. and yeah there are a lot of dialogues I have written like this best fitting for the situation, but I'm also afraid did I did too much.
