I think the original Noah didn't want any skill because he simply didn't need one. Let me explain, It is said that ON(original Noah) wants to die but also wants to fulfill the promise to live. So, he wants to be replaced by someone similar or same. Maybe, He signed an agreement with some heavenly being(God) or became god to bring the NN(New Noah) in exchange for something(Maybe he sacrificed his intelligence) . We also know that the system is connected to the soul so I believe he didn't learn any skill as to not strain his soul during the exchange . He didn't allow the NN to learn any skill as to someday replace him again. He is basically using the NN as a slave to complete a task that the ON wants.
