Because they don't. Itachi literally killed infants and kids and you think they deserve happiness? Fuck that. At the very least Itachi didn't deserve such a painless death. He needed to suffer. You can argue all you want that he wanted to save the village but it doesn't change the fact that he killed more innocents than guilty people. One of my favourite lines from Marvel is "Every time someone tries to win a war before it starts, innocent people die. Every time".
