Katherine was the daughter of the city's mayor. In both the remake and original she was killed by the police chief and was just a dead body you found.

There's two main characters, Claire and Leon. The story switches off sometimes between the two to show a bit of both sides

Not really, the game has been my first and so far only knowledge of the apocalypse world. I might look into some of the other lore but for the most part I plan on keeping the story along the lines of what happened in the Earthblood game, but with my own twists and changes to try and improve the games story.
