I think it would be boring to make him superhuman, so we're on the same page there. William’s goal is to become the heir, so he will do everything in his power to achieve that. As for Edmure, I completely agree with you. There’s no chance William would ever serve him.

So far, I have thought of Lyanna Stark or the Valkyrie who would have reincarnated as well in a noble House (I don't know in which one yet, House Mormont, Barratheon or Tarth are possibilities, and she won't have any cheats contrary to William).
