Will the Dragonborn rise to a level above Daedra, Aedra and other gods? Because the fact that all the god-like creatures infuriated me all the time by the fact that being a creature that can reach their level (like Tiber Septim), they continue to say that the Dragonborn will serve them and his fate is in their hands.

OK if they’re going to lie about their potential ownership over his soul then why doesn’t he just eat their souls instead and take all of their powers and immortality and evolve his race or something

Because he can’t. You can’t eat a daedric prince’s soul and become immortal. The only reason why he can eat dragon souls is because Akatosh set it up like that and the dragons are a part of Akatosh’s soul. Daedric Princes are not. They are almost at the same level as Akatosh not entirely but they are close.

that is actually not true. it is possible for the dragonborn to absorb a God's soul, its just impossible to do so cause of their unique Immortality that spans all time and space, u would need to affect every iteration of them in order to actually absorb their soul
