Because girls in love with each other is usually wholesome and cute (also hot). The reason for male readers liking Yuri more than normal Female to Male relationships should be obvious, everyone has different tastes.

it's just uncomfortable to read a novel from the female POV, because when we read it we like to imagine ourselves in the MC's place... and for a "straight" man it's very strange to imagine himself in the protagonist. In addition, a novel from a male point of view is literally aimed at the female people.
