I can't seem to find any decent fanfics of Naruto's anymore. People get so hyped over Sharingan when they don't know even the basics of it...U need a steady supply of chakra to ur eyes to keep ur sharingan activated(which for me seems like every other sharingan user and byakugan one can notice). Why Kakashi can't deactivate sharingan when Uchihas can? Well, the answer is pretty logical, it was said by Tobirama if I remember correctly that when sharingan is first activated special form of chakra is activated in their brain that's activate it, so the conclusion from this is that this chakra works like a switch on/off, since Kakashi doesn't have that unique chakraso he can't turn off his Sharingan, and since Tobirama could detect that chakra others can too, especially those with dojutsu.

U just made it up in ur head. U said it urself hide the physical changes so they still would see his sharingan with other means that just looking at his eyes.
