First, before MC entered the dungeon, he left his knights in the room to avoid any surprises should anyone try to betray him. That was reason enough to think that Queen Liza wouldn't attempt anything stupid knowing they would be waiting for her at the end of the tunnel. Second, she's standing beside him. He's distracted just for a second and she's gone. There's no way MC would have known that the key was a master one, able to open every cage, even that of the monster, not to mention the danger in releasing the monster. If you think MC is stupid, that's your opinion and you have the right to it. However, MC had just shown caution a moment ago while entering the dungeon, caution back when he was confronting Queen Mare and minded the sharp hair pin in her hair, the one in Queen Liza's... He's cautious. The incident in the dungeon was one of those things you don't see coming.

First, Queen Liza was the one with the key all along.
