Cows can speak, canonically, and they still get milked, canonically. So its either Cow Slavery, Or a really weird business where Cows get paid to make milk. It probably pays a lot and the healthcare benefits must be great if so many cows work there. because I'm pretty sure Slavery has been abolished in Equestria. Or Goat Cheese, Goats aren't intelligent. There's also Soy and Almond milk.
