Why do I get the feeling all he needs to do is stab the head once with the needle? Attacks are clearly too strong for the level range so it probably has a one shot gimmick or you have too wait a certain amount of time after cutting it's nutrients off.

So he's a living evolution factor, only way to kill him is in one hit that's hard enough to do the job completely. If you fail then you grant him an evolution strong enough to tank that again if not completely overcome it.
