that isn't true but most people assume that is why you sear the steaks. in reality it is easier to sear when dry and from a low temp to high temp. the reason you want a sear is for the flavor and texture. there is a technique called a reverse sear which cooks the steaks slowly first then sears afterwards. either way works but an early sear is usually preferred simply because it is easier to cook and get the ideal result. my personal favorite method is sous vide then you use a blow torch to sear after patting the meat dry. it gives the most consistent temp throughout the steak while maintaining a great crust.

idk for all alcoholics but I wasn't physically addicted, I just used it to cope with other things so given how he has a whole new world he probably hasn't had the oportunity to fall back into old habits.
