I assume you are mostly an anime watcher, but Luffy did not struggle against anyone until Katakuri. And even then, Luffy beat him out in every category except haki. And when his haki caught up, Luffy won. As for Kaido, he lacked infusion and awakening. Once Luffy, with ryuo, unlocked infusion, he stood on even grounds. Even without getting ganked by cp0, he would've died, which fulfills requirement for Nika fruit awakening which let him be one step ahead.

He then rushed across the distance and attacked him right before Kidd could unleash his charges up cannon. Let's say Kidd is about half a mile away, Shanks covered that distance in 3-5 seconds (fast enough so Kidd could not fully charge and fire). That is 6-10 miles per second, which converts to 21,600-36,000 miles per hour. No where near the speed of light. Even Kizaru only says speed of light because that's his theme. The speed of light can cross Earth 7.5 times in one second. One piece is about 3x bigger than Earth (someone did the math). Kizaru would literally be moving around the world twice per second. Luffy cannot do that, yet he kept up with the dude's speed in a serious fight on Egghead. If an atom hit the Earth at the speed of light, it would literally destroy it.

Can you guys chill with power scaling? It's the author's story. If you want to power scale, let's compare Dagon to Arlong. Dagon at least stomps Arlong. In this fight, Toji, a non-sorcerer is running on water. Like it's been shown it's a whole ocean. No one but Brook could run on water, and that was because he is literally a skeleton. Bro took out Dagon without a scratch and essentially toyed with him the entire time. He literally split the ocean like Moses with a swing of the nun-chuck. One piece verse could do that with a heavy blunt weapon (swords only slice). But Toji is definitely New world level without haki. He'd be yonko commander or higher with it. If you want another reference, in his fight against Megumi, he broke the ground just enough to form rocks that he then poked to destroy all the shikigaki bunnies. That's equal or stronger to Wano Zoro's observation haki (when shown him having to block the arrows while Luffy dodged all of them). Keep in mind Toji is not using haki in any of these feats. While one piece is most definitely stronger, the strongest (physically) in jjk is at least in the upper echelons of one piece.

People wondering how overhaul would lose to gigantomachi, because plot. Chisaki has been known to rearrange things in a split second. What does it matter if machia gets bigger as he gets angrier if he disappears in an instant? And even if he is max size, Chisaki simply needs to touch him three more times. Endurance machia might have, but he doesn't have super regeneration.
