They could, but probably not much with most of the jjk sorcerer's not being able to see their soul, also they are pretty discriminatory so due to a lack of people who can sense souls the info could have been discarded or forgotten as it could be seen as 'useless' to them.

I'm just expanding on your example from a different perspective, instead of making an ideal bacteria environment, it is more like getting rid of the adverse effects of having the bacteria inside your body while not letting it leave either, sukuna's fingers would typically kill whomever eats them so his body stopped him from getting killed but at the same time he still isn't a viable incarnation, more like a sealed container not letting him out rather than a cup that let's the soul flow freely(which allows possession)if moved correctly. At least, that's my take on the situation.

Well, he'd only start adapting to age once his body starts naturally declining as aging rn is only beneficial and he'd probably only hear a click for age whenever the adaptation is starting to not hold up to his age, so like one every 100, then 1000 etc. until he adapts enough.
I wondered if Gojo could awaken by himself because of my interference, making him the future *pft*...second strongest.
