Oh great, I can already see that this is going to turn into one of those stories where the mc is trying to hide their power to the point where even a blind man can tell they're hiding things for little to no reason. I mean don't get me wrong if she wanted to join Hestia it would make sense to hide because Hestia has very little influence, but Loki is shown to be one of the most influental gods in the city. And wanting to hide her power from Loki also doesn't make much sense given that the Loki familia is repeatedly shown to care about each-other. I mean yeah don't make the mc shout her secrets from the roof, but it really isn't as much of an issue as it seems to be portrayed.

I'm in a bit of a rush so forgive me for summarizing, Shion would be great storywise, Testarossa to explore minor characters, and Konan is just all-round great. You could even do something unique, and make it so instead of meeting by the MC going to her world, she gets reincarnated similar to the MC.
