I always found with stories like this, you can't be the same person without memories, so maybe there is the impression of those memories that remains, like manner and verbal ticks, without knowing where you have them
Just the way the characters act is so annoying and like a caricature of real people. And the author's way of narrating is infuriating to me and from what I saw many others.

You think it mechanical. That way of thought with humans makes it illogical. It might seem illogical to torture if you don't think about the person doing the torture but once you do it makes sense. If something causes you pain it's a threat, if you cause it pain it's prey. torture makes one feel secure in a way.
