I don't think Adam warlock had a body created from the thing which made ultron, but I can see what you mean. From what I remember (I read this 3 months ago and won't be rereading this chapter) and assume is that the coffin didn't create a body with a soul for ultron but the mind stone did. In this case it's a biological body and thus had a developing consciousness or soul
