Maybe they are actually some sort of demon? Like they have some sort of mutation or something (they change into werewolf for example) and use this mutation to fight enemies/abnormalities. 'Hunter' was a generic term that encompassed 'Hunter-Demons,' 'Aberration Exterminators,' and the like. Probably history, while I don't remember him being directly involved in Betrayal, he has few thousand years to do something about it and try to help his master. But he didn't and just focused on his own progress, with no care for others. Adam can see him as someone without loyalty, who will ally with others only as long it suits his needs (not necessarily true, just Adam impression). He doesn't want someone like this be red priest of coming war and is worried, he will betray Earth. Lumian on the other hand is very loyal person (to people he is close to, not these who he infiltrated) and even if he hates Adam for this, he will fight for this world and be loyal to Mr. Fool. There is also that whole 'three specters fused into one' issue, that I'm not sure, if Medici solved (perfectly). It could be big flaw, that could be exploited and reason why Adam chosen someone else.
