people with eidetic memory can also forget. While they remember what they think of at that time, they also forget what they don't think off. In this instance Nick simply forgot about the date of their anniversary because he simply didn't try to remember that and he was concentrating on a cases where he had to figure out who the rat of the police department is. On the other hand had he stopped himself and tried to remember about when their anniversary was then Nick would have certainly remembered it. The problem here was that Nick didn't know the question. The reason he is bad with dates is also because he doesn't make effort in remembering them.

they didn't specifically say it in the TV show but as per the comics he does have eidetic memory. this could be attributed from looking at a wife for only a few seconds but could perfectly draw them in the TV show
