While the noodles were being soaked, Bu Fang was preparing the seasoning. He placed a strict proportion of salt, soy sauce and monosodium glutamate into a blue and white porcelain bowl and poured a little hot water in it. Then he removed the noodles from the hot water and poured them into the bowl. Using bamboo chopsticks, he stirred the bowl which caused the color of the soy sauce to completely seep into the crystal clear noodles.
