Because in those you defeat the rich young master and then his master comes for revenge, when you defeat him the sect master comes, and when he is defeated their elder comes and it goes on forever and ever and ever. Unless you destroy their sect/clan. But then you just find a new young master and the cycle repeats

Honestly, I don't mind both (harem and non-harem) It just all depends on how good it is written I have read amazing FFs in both so. Most of the time when it's a harem story that becomes the main focus and the rest falls to the wayside.
