A small note: if the zoan fruits can have different versions of the same aspect, why can't other ambiguous fruits? The MC will not know the fruit's name, like how Kin'emon does not know his fruit. Yes, but there is a twist. The "madness part is only a small part of what I want to do. All emotions pushed to the extreme are incredibly twisted. The regret will come far too late after they realize who he is later in the story. the MC, being a monster of their own creation. Think of it like every 'hero' in a comic book creates their own villain(s), but in the villain's story, the hero is evil.
