Flying is indeed only first year. The core classes through 5th year: Transfiguration, Charms, Potions, DADA, Astronomy, Herbology. Classes available in 3rd are Divination, Ancient Runes, Arithmancy, Muggle Studies, and Care of Magical Creatures. The 7th year has the opportunity for Alchemy, taught by Proffessor Stumbles himself, but only if there's sufficient demand. Hogwarts doesn't teach enchanting like Beaubaxtons or Dark Arts like Drumstrang. Ilvermorny has a Rituals course.
