Reviving the snake doesn't help the plan. What Darion needs is venomous undead that can infiltrate. Small, fast and invisible in the dark. A revived Pachian snake is still a snake. It can't fly through a barracks window at night without being noticed. The bat is the delivery system, the snake is just the venom source. Darion needs the venom inside something that can actually do the infiltration work.

I won't spoil too much, but Darion's connection to his family isn't something that's been forgotten. His past isn't done with him yet.

The knight-led planting was more of a temporary survival measure during the early days when the barony was still in chaos. Once things stabilize and he starts organizing the population properly, the farmers take over the farmland work. The knights go back to being just knights. It's a transition that happens as Percvale moves from "barely surviving" to "actually rebuilding."
