Well, the anime doesn't give them much justice, but more or less their power level scale this way: Adult can be between island level to continental level with a few exceptions which are much higher. Perfect are between world level to universe level. Ultimate are between multiverse to complex multiverse. Using the Saints as example it roughly is like this Adult=Silver, Perfect=Gold, Ultimate=Gods.

Saori's human identity is that of the adopted granddaughter of Mitsumasa Kido, Seiya, Seiya and the other are his direct son's and daughters so from a family hierarchy pov Swims is her aunt.
