The event has yet to be fully explore so we don't even know if one Celestial Dragon died at that incident. They could have just attributed it to just a fluke since Celestial Dragons are arrogant and Pirate crew like the Rocks never reappeared afterwards. There is a difference between learning haki and using haki. When I say learning Haki i mean mastering it as well as learning its existance. It is the difference between Pre Timeskip luffy and Post Timeskip Luffy. He had haki and used it somewhat but you could not say that he learned it at that point in time.

Kinda, this might be lazy but most of the AU character will look like anime character from different fiction. It kinda helps to visualize them if the readers have a clear picture of what they look like. He looks like Chandler from Seven Deadly Sins.
