The pyramid bit will end by Chapter 79. There will be a few more chapters that will go over the consequences of this arc and the rest of the summer, before going back to Hogwarts. Patreon already is at the start of the Second Year, so less than 15 Chapters.

There is no cannon Daphne, her name was only mentionned in the books, she never actually appeared in either the books or the movies.

They all go to Hogwarts because it is the easiest. There is next to no information about the other schools, so sending your character there would be tantamount to writing your own story, all you got to do by then is change the name of the spells and you got an original story, so no one really bothers.

Not sure yet, it will depend on how fast I can write. Either daily or 5 chapters every week.
