btw in the original story akira hayama came before Soma and indeed showed his naan pot pie curry (puff pastry soup) soma however came up with a curry based risotto wrapped in an omelet to keep in the spice scent/flavor and act like a flavor bomb like hayama's pastry shell did the same...akira scored 94 where soma scored 93... this time i guess because of butterfly wings flapping...(changes in plot cause of mc) soma didnt go to shun's spice lab and didnt meet akira, thus didnt get beaten up in terms of spice knowledge..hence he didnt follow the extreme flavor/scent path, but instead improved on the path of simplicity that the yukihira diner is known for
