simply sharingan help follow/copy taijutsu movement/technique but that doesn't mean he can alway follow if the enemy had a lot of speed or use immediatly a copied taijutsu technique because he need to have trained his muscle enought to use it without hurting himself. Sakura, even if she hasn't the well trained body of the old her, has a lot of battle esperience and have started training her younger body; a just graduated Sasuke not have enought strenght to compensate his lack of battle esperience with strong /capable enemy

I am a little bit puzzled here though, Rock Lee said that sharingan is useless on someone using only taijutsu, there is no chakra flow they can read or predict, they observe better yes, but predicting movements doesn't work, only experience would help here. The fact that Sasuke almost one is not sharingan, but muscle memory that she is missing and needs to think instead
